Here are a few delicious recipes featuring celery:

1. Celery and Apple Salad

Ingredients:

  • 4 stalks celery, thinly sliced
  • 2 crisp apples, diced
  • 1/2 cup walnuts, chopped
  • 1/4 cup dried cranberries or raisins
  • 1/4 cup mayonnaise or Greek yogurt
  • Juice of 1 lemon
  • Salt and pepper, to taste

Instructions:

  1. In a large bowl, combine the sliced celery, diced apples, walnuts, and cranberries.
  2. In a small bowl, mix the mayonnaise (or yogurt) with lemon juice, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Chill for 20-30 minutes before serving.

2. Stuffed Celery Sticks

Ingredients:

  • 4-5 stalks celery
  • 1/2 cup cream cheese, softened
  • 1/4 cup blue cheese or cheddar cheese, crumbled
  • 2 tablespoons fresh herbs (such as chives or parsley), chopped
  • Salt and pepper, to taste
  • Optional: hot sauce for a kick

Instructions:

  1. Wash and cut the celery stalks into 3-4 inch pieces.
  2. In a bowl, mix the cream cheese, crumbled cheese, herbs, salt, and pepper (and hot sauce if using).
  3. Fill each celery stick with the cheese mixture.
  4. Serve immediately or refrigerate until ready to serve.

3. Celery Soup

Ingredients:

  • 4 stalks celery, chopped
  • 1 medium onion, chopped
  • 2 potatoes, diced
  • 4 cups vegetable or chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Optional: cream or milk for serving

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the onion and sauté until translucent.
  2. Add the chopped celery and potatoes, cooking for about 5 minutes.
  3. Pour in the broth and bring to a boil. Reduce heat and simmer for 20-25 minutes, until vegetables are tender.
  4. Use an immersion blender to puree the soup until smooth. Season with salt and pepper.
  5. If desired, stir in cream or milk before serving.

4. Celery Stir-Fry

Ingredients:

  • 4 stalks celery, sliced diagonally
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Optional: sesame seeds for garnish

Instructions:

  1. Heat sesame oil in a large skillet or wok over medium-high heat.
  2. Add garlic and ginger, stirring for about 30 seconds until fragrant.
  3. Add celery, bell pepper, and carrot. Stir-fry for about 5-7 minutes until tender-crisp.
  4. Pour in the soy sauce and stir to coat. Cook for another minute.
  5. Garnish with sesame seeds before serving.
